The cost of extra virgin olive oil is made up of many items for which an olive grower is responsible

– production costs in the field (from pruning to harvesting, the latter phase also having the greatest impact depending on the conformation of the land)

– processing costs at the mill (facilities, personnel, certifications)

– bottling costs in the warehouse (caps, glass, labels, cartons);

– marketing costs (packaging, shipping, authorisations).

Curiosity: the price of ‘bulk’ oil (i.e. not packaged) is set by an international commodities exchange (like the one for company shares!) and is determined on the worldwide quantity of e.v.o. oil produced and available among all producing countries.
